This tartar is made of lightly smoked salmon and cottage cheese, which makes it very fresh and light. The taste is perfectly balanced.
Cut salmon into very small pieces. Add drained cottage cheese, finely chopped capers, finely chopped spring onions, smashed peppercorns, mustard, olive oil, and gin or vodka. Mix together.
Toast white bread and serve with salmon tartare and lime wedges.
Recommended wines: Sauvignon Blanc, Chardonnay.
