This is one of my favorite traditional Persian dishes. It’s basically an herb frittata. I like to serve it with a simple tzatziki.
Wash all the herbs thoroughly and leave them to dry. I usually do this the night before to save some time. Chop all the herbs and green onions relatively fine. Toss them together in a medium bowl along with the flour, salt, pepper, and garlic powder.
Crack the eggs in another bowl and whisk them together. Heat the oil (I use grapeseed but both canola or olive would work) in a medium non stick skillet on high heat.
Pour the eggs into the herb mixture and toss until combined. Add the mixture to the hot pan and turn the heat down to medium low. Cover the pan and cook for 6-7 minutes or until the center is somewhat set when you shake it. Using a spatula, push the koo-koo onto a plate so that you can flip the uncooked top into the pan. Cook on the other side, covered, for another 6-7 minutes then slide onto a plate, slice and enjoy!
