Simple tomato-based pizza sauce with a rustic flair.
Puree diced tomatoes to desired consistency (we like ours a bit chunky).
In a medium saucepan over medium heat, add diced tomatoes, tomato sauce, onion, garlic, Italian seasonings, salt and pepper. Bring to a simmer, stirring occasionally.
Allow to simmer over medium-low heat for 15 minutes; continue stirring occasionally. If sauce is splattering, loosely cover with a screen or off-set lid. Wonderful on pizza or as a dipping sauce.
Fresh onion and garlic are also delicious; sauté in a bit of olive oil til soft and then add remaining ingredients. And if you have fresh herbs, all the better!
You can drain juice off tomatoes before pureeing, if you like a thicker sauce. Recipe freezes and doubles well.
