The uses of a rotisserie chicken are endless!
1. Drizzle the olive oil into a medium pan over medium heat. Once oil is hot add the bell pepper and onion and saute until soft. Remove pan from heat.
2. Place 2 tortillas on your work surface. Layer the chicken, bell pepper and onion mixture and cheese onto these two tortillas.
3. Place another tortilla on top of each. Heat a griddle or skillet over medium heat. Once hot add the quesadillas and cook, flipping once each side is golden.
4. Serve with scoops of salsa.
