Roasted Turkey Breast with a Shallot and Herb Butter Rub.
Preheat oven to 350°F. In a bowl, soften butter for 10 seconds in microwave. Add minced shallot and Herbs de Provence. Mix to create a butter rub.
Lift skin from bird but do not remove it and smooth butter rub over turkey. Season skin with salt and pepper to taste.
Roast turkey breast for about 1 1/2 to 2 hours or until internal temperature reads 160ºF. Tent meat with foil for 10 minutes before carving and serving.
