This sweet, fresh tomato sauce is a perfect way to use your garden tomatoes
Preheat your oven to 400 degrees.
Put the chopped tomatoes, onions, garlic, and herbs together in a bowl. Add the red pepper and salt and pour the olive oil over everything. Stir to mix.
Pour the contents of the bowl into two 9 x 13 glass baking dishes. Put the dishes in the oven and roast the sauce for about an hour, until some of the liquid has evaporated and the tomatoes are roasted and sweet. Stir once or twice during the roasting process.
Pour the finished sauce over your favorite pasta, or pour it into a freezer bag and freeze it for it up to a year.
