This was an extremely popular dish at the cafe that always sold out. I have seen versions on high end restaurant menus for $10.95 as an appetizer. Seriously, they are way over-charging. This is so incredibly easy to make.
Make sure you have plenty of crusty bread to soak up the sauce.
Preheat oven to 450 F Place tomatoes in a large baking dish. Drizzle the olive oil over the tomatoes and add the garlic, salt and pepper. Toss to coat. Place dish on top rack of oven and roast for 20 minutes.
Remove dish from oven. Stir in the shrimp, parsley and lemon juice. Sprinkle with the feta cheese. Place back in the oven for another 10-15 minutes or until shrimp are cooked. Serve warm with crusty bread.

I LOVE some of the suggestions I have received from other members. One suggesting serving with pasta – Brilliant!!! to another member whose husband is allergic to shrimp so she used chicken – LOVE IT!! It’s great to see how everyone is TaylorMaking this dish for them!!!

Deanna, Over pasta..YUM!! Excellent idea. and a great way to “bulk” out the dish for a crowd!!!! I am going to do that next time. Also had someone email me asking if they could use chicken instead of shrimp due to husbands shellfish allergy.. Another great idea.. (Just adjust the cooking time)
