Is it a tart? Or a pizza? You decide! It can be used as an appetizer or a meal.
I started with the puff pastry on a pizza stone that was drizzled with olive oil. Fold the edges of the pastry up to form a lip. Lightly drizzle some olive oil on the pastry, about 1 teaspoon. Next spread the tomato sauce on the pastry.
Now the fun begins. Tear the red peppers into bite size pieces and lay them on top the tomato sauce. Salt and pepper this layer. Drop crumbles of the goat cheese on top of the peppers.
You can be creative here and add mushrooms, olives, anything that makes your heart flutter. Pop it into the oven for about 20 minutes at about 350-375F, depending on your oven. Keep an eye on it, when the pastry edges are a golden brown, it’s done.
Just before taking it out of the oven, roll up and chop some fresh basil leaves. I ended up with about 3 heaping tablespoons, but then I love basil! When the tart comes out of the oven sprinkle the basil on top. Cut, serve and enjoy baby!!!
