A delicious pork roast with melt-in-your-mouth pumpkin and garlic cloves. Simple and easy.
1. Preheat oven to 375F (190C).
2. Cut off the head of the garlic, exposing the garlic cloves.
3. In a baking pan, put the pork, pumpkin, garlic and fresh thyme. The garlic heads have to be facing up.
4. Pour the white wine over the vegetables and the meat.
5. Pour olive oil over, making sure the garlic cloves get a lot of olive oil.
6. Add salt and pepper to taste.
7. Cover with aluminum foil and put in the oven for 45 minutes.
8. Remove the foil; if any liquid remains, pour it over the meat.
9. Put it back in the oven for another 20-30 minutes. It’s cooked when the garlic cloves start to get out of their shell and are golden brown.
Note: you could add potatoes to the dish. It’s very good reheated, so don’t worry if you bought too much meat.
