Easy pita pizzas with roasted vegetables and chicken. I used whatever vegetables I had on hand, so experiment!
Preheat oven to 450F. Toss chopped vegetables with the canola oil and place in a baking dish with chicken. Roast until a thermometer in the deepest part of the meat reads 165F, or until the juices run clear.
While the chicken and vegetables roast, place pitas on baking sheets. Brush with the olive oil and sprinkle 1/2 tablespoon of parmesan on each pita.
Remove chicken and vegetables from the oven and allow to cool slightly. Preheat broiler. Remove skin from chicken and cut meat off of the bone into small chunks.
Spread the roasted vegetables on the pitas and top with the chicken and mozzarella. Broil until golden brown and gooey!
