Simple, quick and quite tasty!! This has become one of my “go to” meals to fix when nothing else sounds good.
Quantities can easily be adjusted for more servings. These are the amounts I use for two servings.
Preheat oven to 350.
Toss the broccoli with the 1 Tbsp of the olive oil, cumin, coriander and cayenne pepper in a large bowl until well coated. Place broccoli in a single layer on a baking sheet. Place in oven and roast for 10 minutes.
Meanwhile, in the same bowl, toss the shrimp with the remaining 1 Tbsp olive oil, salt and pepper. Add to baking sheet with broccoli, in a single layer. Roast for 10 minutes longer, giving a bit of a toss half way through. Shrimp will be just done and the broccoli getting golden and crispy around the edges.
I usually eat this with a side of Oriental flavor Top Ramen. It just tastes right!

Made this for dinner tonight. At first I was going to make some Jasmine Rice to go along with it, but I got impatient.
I threw just a little extra coriander/cumin/cayenne in with the salt/pepper when I tossed the shrimp with olive oil, and as an afterthought tossed in the tiniest drizzle of sesame oil.

I made this tonight for dinner. It was so easy and tasted wonderful. The cayenne was a little much for the little ones, so I might omit that next time, but I thought it was perfect. Best yet, it was so inexpensive.

I’ve made this a couple times, seeing it first from Wednesday Chef’s blog. It is so quick to make, healthy, and delicious. It’s very easy to change the amounts for number of servings, and is easy to make for one.
