Cereal isn’t just for breakfast. It does double-duty in the kitchen creating a crispy coating on this quick-to-put-together tasty chicken.
Preheat the oven to 400 F. Line a rimmed baking pan with foil. Find a wire cooling rack that will fit inside the baking pan, spray it with non-stick cooking spray, place it in the prepared pan and set the pan aside.
Pound down the thick part of the chicken breast so the chicken is even thickness.
In a medium bowl, combine the crushed cereal, Parmesan cheese, salt (if using), pepper, parsley, basil, oregano, paprika, onion powder and garlic powder. Stir to mix well.
Place the melted butter in a shallow bowl.
Place the crumb mixture in a pie plate or on a sheet of waxed paper.
Dip each piece of chicken in the melted butter, letting any excess drip off, then coat both sides of the chicken with the cereal mixture, making sure to coat the chicken liberally. Place the coated chicken on the rack in the baking pan. Drizzle any remaining butter over each piece of chicken.
Bake on the bottom rack of the oven and bake at 400 F for 25-30 minutes, or until juices run clear and chicken is cooked through.
Makes 4-6 servings depending on how large the chicken pieces are.
