Description

This chicken dish is so easy and tastes delicious. You can serve leftovers over tortilla chips the next night for dinner or a snack. Just add some grated cheese on top – delish!

Ingredients

  • 4 pieces Boneless Chicken Breasts
  • 12 ounces, weight Jar Of Roasted Red Peppers, Partially Drained
  • 15 ounces, weight Can Of Diced Tomatoes, Partially Drained
  • 15 ounces, weight Can Of Black Beans, Rinsed & Drained
  • 1 whole Medium Size Onion, Diced

Preparation

Combine all ingredients in a crock-pot on low for 6 hours.
Serve over a bed of rice.

Shred leftover chicken and and serve over tortilla chips with the veggies and some grated cheese the next night for a delicious snack or dinner.

I adjusted the quantities a little bit, and the over all dish was really tasty! I didn’t expect that combo of foods to pack that much flavor, delish! I didn’t have any rice on hand so I used papardelle pasta. This dish is simple, creative, and easy. Thumbs up!

this was super easy! i added a packet of fajita flavoring because i’m addicted to seasoning, and i’ll probably add another when i make this again.

it did come out a lot more water-y than i expected.
