Description

This is a a quick and easy recipe – one of our “go-to” recipes for a busy evening.

Ingredients

  • 2 Tablespoons Oil
  • 2 whole Onions, Chopped
  • 1 whole Green Pepper, Chopped
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Chili Powder
  • ½ teaspoons Chipotle Chile Powder
  • 2 teaspoons Oregano
  • 2 cans Kidney Beans, Drained And Rinsed
  • 1 can Tomato Sauce (8 Oz)
  • 1 cup Water
  • 1 dash Hot Sauce (i.e., Cholula)
  • ½ cups Sour Cream
  • 6 cups Cooked Rice

Preparation

Cook rice.

Heat oil in large skillet.

Add onions and saute till they begin to get translucent.

Add green peppers. Saute till they begin to get soft.

Add garlic, cook for 1 minute.

Add chili powders and oregano and let cook 1 min.

Add beans, tomato sauce and water.

Bring to a simmer and cook for 10 minutes.

Stir in hot sauce.

Serve over rice and top with sour cream.

**You can change up the onions and peppers, more peppers, less onion if you like. I like onions a lot.

Wow, this is hot!! I guess it was the chipotle chili powder (I didn’t even add the hot sauce). Next time I will significantly decrease the spiciness–and we like spice! But the flavor is good. :o)

This recipe was quick & easy! I made a couple of substitutions because I was missing ingredients. (I subbed cajun seasoning for the chili powders – using approximately 1-2 teaspoons of it – and I left out the tomato sauce.) I loved the flavor! This one will definitely make future appearances at my house. Thanks for sharing!
