When I think cheese, I automatically think savory, but cheese can be sweet and it can even be made sweeter than it actually is. Different ingredients can bring out the nuances of a cheese. For sweet cheese sandwiches, brie is my cheese of choice. It’s creamy, mild, and its hazelnutty aftertaste easily complements things that are sweet.
Heat a large skillet over medium heat.
For each bread slice, butter one side. On the unbuttered side, spread honey. Layer berries and sliced brie on top of the honeyed slice. Top with the remaining slices of bread (buttered-side up) to form a sandwich.
Transfer sandwiches to the skillet. Cook on each side for 2–3 minutes or until bread is golden brown. Serve immediately.
