Easy chicken parm that’s just as good as the restaurant version, without the expense.
Preheat oven to 400 degrees. Line a baking sheet with tin foil.
Using a fork, beat the eggs together in a small bowl.
Combine bread crumbs and parmesan cheese in a medium bowl.
Coat both sides of a chicken breast with egg, then cover both sides with the bread crumb mixture. Scoop some up with your hands and pat it onto the chicken to really get the whole thing coated.
Transfer the chicken breast to the tin foil-covered baking pan.
Repeat with the remaining chicken filets.
Bake for 20 minutes at 400 degrees.
Sprinkle the mozzarella cheese on top of the chicken and bake for another 2 minutes to melt the cheese.
Serve with pasta and spaghetti sauce.

This is the same recipe my daughter -in-law had given me. Since my husband freaks out over baked chicken or chicken breasts…I thought, “Hmmm. I love this, but will he eat it?”
But I think it’s great, I put cheddar cheese on top 5 minutes before I got ready to take it out of the oven. Hubby will eat anything with cheddar on it, I think!
This is the way to bake chicken–it’s so tender, yet cripsy on the outside. Instead of serving it with marinara sauce and noodles, I put some butter and cinnamon/sugar on some baked sweet potatoes , heated ‘em in the microwave and served them with it. I put a dollop of sour cream over the cheese-covered chicken and he couldn’t get enough! Haha–he doesn’t even know it’s Parmesan Chicken–I told him it was ‘Cheesy Chicken”and he ate two 1/2 large breasts I had pounded veforehand.
I recomment this highly!
