This is sure to please kids and adults alike! It’s a recipe from my mom that I grew up eating and now I’m making it for my son. It is very basic and you can change it easily without messing it up. Hope you enjoy!
Preheat oven to 350ºF and set water to boil for the pasta.
Melt butter over low heat in a large skillet. Once melted, whisk in flour slowly, stirring constantly to avoid lumps from forming. Once combined, continue cooking and stirring for about 5 minutes to create a roux. It should look similar to gravy. (It should be about time to add pasta to your water now.) Add milk and stir.
Add about 1 1/2 cups of cheese and reserve the remaining cheese for the top of the casserole. Let cheese melt, stirring often. If your sauce looks too thin for your liking, add more cheese; if it looks too thick, add more milk. Stir in spices and hot dogs, if desired, and cook over low heat until pasta is done.
Drain pasta and stir into your cheese sauce. Dump mac ‘n’ cheese into a lightly greased 9×13 pan and sprinkle remaining cheese on top. Bake for 20 minutes or until cheese is lightly browned.
