This version of a quesadilla is quick, crispy and easy to customize.
Lay four tortillas on your work surface to assemble quesadillas all at once.
Place ingredients on the tortillas starting with one slice of cheese. Any kind will work, but I like colby or cheddar best. You can also use queso fresco if you have it.
Next add to each quesadilla: 2 tablespoons beans, 2 tablespoons rice, a dash of spices (garlic powder, onion powder, chili powder all work well), and 1/4 cup spinach leaves.
Top with a second slice of cheese and another tortilla.
Head a cast iron skillet and spray with canola oil. Working with one quesadilla at a time, fry until crisp on both sides and cheese is melted.
Serve with salsa, sour cream and/or guacamole.
