A easy and yummy pork filling perfect for any Mexican recipe!
Cut any visible fat from the pork loin. In a small bowl, mix together dry ingredients and rub all over pork loin. Set pork in the insert of your crockpot.
In a bowl, mix together Coke Zero and enchilada sauce. Pour over pork. Place lid on top of insert. Cook on low for 8 to 10 hours or until fork tender.
Shred meat with 2 forks and allow it to sit in the juices until ready to serve.
This freezes very well.
Meal ideas: soft tacos, hard tacos, taco salad, enchiladas, baked taquitos, quesadillas, and burritos.
