Chicken breasts stuffed with gorgonzola and mozzarella cheeses, wrapped with prosciutto, and baked. Easy and elegant!
Preheat oven to 400ºF. Spray an 8×8 baking dish (with canola or olive oil spray (or spread a little olive oil in the bottom).
Cut chicken breasts almost in half horizontally so that it opens like a book. Sprinkle mozzarella and gorgonzola on each chicken breast and fold chicken back over cheeses. Wrap each breast with 2 slices of prosciutto. Place breasts in prepared dish. Drizzle with olive oil and salt and pepper.
Bake for about 25 minutes or until chicken is cooked through.
