I love garlic! The taste, the smell—I would probably buy garlic scented air freshener if such a thing existed. Between the cider and the garlic this smelled wonderful cooking and was enjoyable eating too!
In a large skillet heat the oil over medium. Once hot add garlic and cook the garlic gently for a couple of minutes, until garlic is softened. Sprinkle salt and pepper on both sides of the pork chops.
Raise the heat to medium-high and then add the pork. Cook the pork well, turning several times. The time will depend on the thickness but it should reach 145 F on an instant read thermometer.
Remove the pork from the skillet to a plate to rest. Add the cider, salt and nutmeg into the skillet. Raise the heat to high and cook until the cider is reduced to the thickness of a sauce.
Remove the garlic slices from the sauce before topping the pork with sauce.
