This is a two step process, but my oh my, it is so worth it and you will see why!
Combine all ingredients in a crock pot and cook on high for 6 hours.
Then spray a large casserole dish with non-stick spray. Add pork roast into the dish and use two forks to shred it. Then pour all the juices from the crock pot on top of the pork. Heat oven to 375 F and when it’s preheated, put the dish into the oven and bake meat until liquid disapates and meat starts to brown. As it cooks, keep tossing and stirring the meat until evenly browned. This takes approximately 1 hour.
For serving: Put the meat into taco shells, top with salsa, cheese, lettuce and green onions. Or whatever else you might like.
