Quick and easy “casserole” type main dish. Serve with a salad and bread.
Get one of those fully cooked small rotisserie chickens from the grocery store. Remove all meat (don’t keep the skin) and chop or shred into pieces. Mix with cream of chicken soup and sour cream. Throw in poppy seeds as you prefer. Pour all into a baking dish, top with a fair amount of Club Crackers (no need to crumble). Arrange 8 or so slices of butter on top of the crackers. Bake at 350 degrees for 20 minutes.

Got this recipe from a friend, who found it in a cookbook she found at a garage sale. This is a staple at our house all love it but my husband. Except we use Ritz crackers and chicken tenders.
