This is a very tasty and quick recipe.
Cut along the breast bone of the chicken and carefully remove it. Wash the chicken and pat it dry.
Open it up, like a book and flatten it. A good whack with a rolling pin helps
In a shallow dish mix together all the other ingredient for the marinade.
Add the chicken, turning it to coat.
Cover and put in the fridge for half an hour minimum (longer is better).
Now you can put the chicken on the BBQ, under the grill or in a heavy non stick fry pan on high heat.
Cook for 12 minutes, then turn and cook for another 12 minutes, basting it often with the marinade.
Serve with a salad! How easy is that!
Hints
You can add some chillies to the marinade, for a “hotter” finish
The cooking time indicated is for a chicken of 1.5Kg maximum weigh. For bigger chicken extend cooking time accordingly.
