Polenta is a classic Northern Italian dish that can be served with various toppings like meats, sauces, cheeses, sauteed mushrooms— whatever you like! The best part? It’s easy and delicious! In this recipe, I use Gorgonzola.
*Note: This recipe is delicious served with whatever you like. I like to use cheese because it requires no extra steps. If you have left-over Bolognese sauce or ragu or pulled pork or anything–throw that on top and it makes for a wonderful, different meal!
1. Pour the water into a pot and bring to a boil. Add the salt and the corn flour. Lower heat.
2. Cook for one hour, stirring constantly. You know when it is ready when you try to transfer to a serving dish and it easily detaches from the pot.
3. If you are adding the Gorgonzola or the Gruyere, pour/place in the center of the polenta and let cool for a few minutes. It will harden a bit and that gives the cheese the opportunity to melt. If you have other toppings that you’d like to add, do so at this time. Serve while still hot.

Thanks for the FR! I am checking out your recipes – this one I’ll definitely try soon! I LOVE polenta! I usually buy it already made (did I just admit that?) but am going to try this recipe – it looks easier than going to the grocery store and buying it prepared. Way cool!

Looks yummy! I grew up on polenta. My dad is Italian and he would make it all the time. Is this hollowed out a bit with filling inside? what a great idea!

Mmmm, looks yummy! We just had polenta fried in butter last night, topped with a tomatoish/bruschetta mixture, and grated parmesan cheese. We also loved it plain with honey on top!

I adore polenta, and I was just staring at my bag of corn flour thinking it needed some love. I can’t wait to add the cheese to this.
