The combination of sweet and salty is perfect here. It is a great and seasonal flatbread that tastes as beautiful as it looks!
If you want to make your own pizza dough, by all means do so. I am lazy and in love with Trader Joes ready made pizza doughs and highly recommend that you try them if you haven’t!
So to begin, heat olive oil over medium heat in a large pan. Once heated, add the sliced red onions along with three sprigs of fresh thyme to the pan.
Allow this to cook undisturbed for about 10 minutes, then stir and let it sit undisturbed for another 10 minutes.
Then add the balsamic vinegar and salt and pepper to taste, allowing the onions to cook for about 5 minutes until the balsamic is reduced and no longer runny.
Remove from heat, discard thyme sprigs and allow onions to cool completely.
Roll out your dough into a desired size and shape on a generously floured surface.
Preheat oven to 400 degrees F and place dough on a prepared baking/pizza sheet, or hot pizza stone (what I use).
Evenly spread the caramelized onions over the dough, followed by the sliced plums. Finish by adding dots of goat cheese throughout the top of you pizza and slide that baby into the oven.
Cook until the the crust is crispy and browned about 20-25 minutes.
Remove from oven and drizzle some olive oil, balsamic and a few fresh thyme leaves.
Slice up and enjoy immediately!
