Description

If you love pizza, and you love lasagna, then you LOVE combining the two!

Ingredients

  • 1 pound Ground Turkey
  • ½ whole Onion, Chopped
  • 1 whole Green Pepper, Stem And Seeds Removed, Then Chopped
  • 2 cans (14 1/2 Oz. Each) Diced Tomatoes, Drained
  • 1 can (6 Oz. Can) Tomato Paste
  • 1 can (15 Oz Can) Tomato Soup
  • 1 teaspoon Each Oregano And Garlic Powder
  • ½ teaspoons Salt
  • 9 whole Lasagna Noodles, Cooked Al Dente According To Package Directions
  • 2 cups Shredded Mozzarella
  • 1 can (2 1/4 Oz. Can) Sliced Olives, Drained
  • 4 ounces, weight Sliced Mushrooms
  • 6 whole Green Onions, Chopped

Preparation

Brown turkey, onion and green pepper in a skillet that you’ve set over medium high heat. Cook until meat is cooked through and no longer pink. When done, remove from heat and set aside (drain grease if needed).

For sauce, combine diced tomatoes, tomato paste, tomato soup and seasonings.

Preheat oven to 350 F.

Spread 1/2 cup of the sauce on the bottom of a greased 9×13 baking dish. Layer 3 cooked lasagna noodles over the sauce. Spread 1/3 of meat mixture and 1/3 of the remaining sauce over the lasagna noodles. Sprinkle olives over the top, and then cover with 1/3 of the cheese. Repeat layers with 3 lasagna noodles, 1/3 of meat mixture, 1/3 of the sauce, mushrooms and cheese. Repeat layer one last time with remaining lasagna noodles, remaining meat mixture, remaining sauce, green onions and cheese.

Cover and bake at 350 F for 30-45 minutes or until heated through. Uncover and bake 10 minutes more, until the cheese is melted.

Gluten-free variation: Use gluten-free lasagna noodles … works great!
