A yummy, cheesy, warm, all-in-one dish of spicy sausage, pinto beans, cheese and cornbread.
Brown sausage in a skillet with the diced bell pepper and onion. Once meat is completely cooked and onion and peppers are softened, drain the mixture. Pour meat mixture into the bottom of a 9×13 dish and spread out evenly. Pour the Rotel on top, followed by the pinto beans. Sprinkle cheese over the mixture. In a separate bowl, mix milk and corn meal. Pour cornbread mixture over the casserole, spreading evenly.
Bake at 350 degrees for 40 minutes or until cornbread is brown and cheese is bubbling. Allow to rest for 5 minutes. This is also great the next day! I love one-pot meals and this is a go-to recipe for me!
