A wonderful take on traditional fajitas with the addition of pineapple.
Heat olive oil in a pan over medium to medium high heat. Add chicken and cook until done, turning once or twice.
While chicken is cooking, combine ingredients for fajita seasoning: corn starch, chili powder, paprika, salt, sugar, onion powder, garlic powder, ground red pepper, and cumin. (This seasoning is a basic fajita seasoning and can be used with any fajitas.)
Once chicken is cooked through, add 2 tablespoons fajita seasoning to chicken, remove from pan.
Add sliced peppers and onion to pan and cook until crisp tender.
While peppers and onions are cooking, combine the following: water, honey, dried parsley, 1 teaspoon garlic powder, 1/2 teaspoon salt and the remaining fajita seasoning.
Add seasoning, reserved chicken and pineapple to the veggies. Combine and heat through.
To serve, place desired amount of fajita filling in a warmed tortilla. Top with desired toppings (I use sour cream and shredded cheese).

Not only are these low in calories.. they were awesome! Definitely better than regular old fajitas!!
