Pimento-Style Grilled Cheese

Description

A little twist on a pimento cheese grilled cheese sandwich by removing the pimentos and replacing them with just the olives. Wow, did this one taste great.

Ingredients

  • 1 cup Sharp Cheddar Cheese, Shredded
  • 8 whole Large Green Olives, With No Pimentos, Chopped
  • 3 Tablespoons Mayonnaise
  • 2 cloves Garlic, Grated
  • 1 pinch Cracked Black Pepper
  • 2 slices Bread
  • 1-½ Tablespoon Unsalted Butter

Preparation

To make the cheese, add everything except the butter and bread into a mixing bowl and mix it very well. Cover with plastic wrap and place in the refrigerator for at least one hour.

When you are ready to make the grilled cheese, spread the half of the butter onto one side of one slice of bread. Spread a generous amount of the pimento-style cheese onto the other slice of bread.

Heat a skillet on medium-low heat. Add the buttered slice of bread to the skillet, butter side down, then top it with the cheese slice (cheese side down). Spread the top of the sandwich with the remaining butter, and cook for a few minutes, gently lifting and looking for a golden brown on the bottom side. Once golden brown, flip and cook the other side until golden brown.

Place onto your serving plate, and slice in half, or not, that’s up to you!

The end result is one of the best grilled cheese sandwiches I’ve had in a long time. It was nice and cheesy, but had this awesome kick from the garlic and olives. I was kind of giggling when eating it because it was just that awesome. So if you haven’t made pimento cheese, give it a shot, and let me know what you think.
