Pimento cheese is a true Southern classic. Don’t skimp on the mayonnaise for the most creamy pimento cheese. To alleviate your mayo-guilt, you can use low-fat mayo without sacrificing flavor. Feel free to add a dash more cayenne pepper if you like it hot.
In the bowl of a food processor, add grated cheddar cheese, mayonnaise, pimientos, salt, sugar, and cayenne pepper. Process until well-combined. For a smoother texture, process for longer. Add freshly ground pepper and salt to taste.

You bet! In the South, it’s used as a spread for crackers, stuffing for celery, and as a dip for corn chips, tortilla chips, or vegetables. I’ve seen it baked into cornbread and biscuits, macaroni and cheese, spooned into hot grits, or used in omelets, cheese straws, and fritters. Some people spread it on hamburgers and hot dogs, or use it in a grilled cheese sandwich. My all time favorite, though, is the traditional pimento cheese sandwich as pictured. I always have a homemade batch in the fridge to serve when friends drop in, and I often make it for gifts.

Pardon my ignorance, but are there any other uses for this spread than putting it on sandwiches. Nothing against sandwiches, but this sounds too good not to use it in other dishes as well!
