Here are two of my favorite Southern foods: shrimp and pimento cheese. This mixture went perfectly on a variation of another Southern favorite: corn English muffins. I knew the second I saw them at the store I had to try them, and their slightly sweet flavor was perfect. This recipe was a huge hit with the family and I know the next time I make this I will be doubling it!
Mix the shrimp, celery, onion, and cheese spread.
Toast the English muffins. Divide the mixture between the 4 muffins.

Never thought about the combination of pimento cheese and shrimp…Not sure about it, if I try it, and I probably will, I will make my own pimento cheese. I have never found a pimento cheese “spread” that I liked. Check out my recipe for pimento cheese (on my blog which you can get to through my profile page). People who say they don’t like pimento cheese say pass the fritoes when they tste mine.
