Description

Patty melt with white cheddar pimento cheese, jalapenos and crispy bacon.

Ingredients

  • FOR THE CHEESE:
  • 1 cup Shredded White Cheddar Cheese
  • 1 cup Shredded Pepper Jack Cheese
  • 1 cup Monterey Jack Cheese
  • 1 cup Mayonnaise
  • 1 whole Jalapeno Pepper, Diced
  • 1 Tablespoon Horseradish
  • ½ cups Drained Diced Pimentos
  • FOR THE PATTY MELT:
  • Oil For Cooking
  • 1-½ pound Ground Beef
  • Salt And Pepper, to taste
  • 8 slices Rye Bread
  • 8 whole Slices Bacon, Cooked
  • 8 Tablespoons Butter

Preparation

For the cheese:
In a large bowl combine all ingredients, stirring until well combined. Refrigerate for at least 2 hours.

For the patty melt:
Heat oil in a large frying pan. Season beef with salt and pepper and divide into 4 patties about ¼” thick. Make sure they are longer and a bit wider than your bread.

Working in batches if necessary, add burgers to frying pan and cook until browned, turning once. This should take about 4-5 minutes per side.

To assemble:
Spread pimento cheese onto each slice of bread. Top 4 pieces of bread with 2 slices of bacon, then your beef patty, followed by another piece of cheese-topped bread (cheese facing the patty). Carefully butter tops of bread and lay butter side down onto a nonstick skillet. Butter the tops of bread. Brown sandwiches on each side until golden brown, about 5-6 minutes.
