Spring in a bowl!
1. Bring a large pot of salted water to a boil. Prepare a large bowl of ice water.
2. Put peas into the boiling water. Boil peas for 30 seconds and then remove them from the boiling water with a slotted spoon and drain. Then immediately plunge them into the ice water.
3. Bring the water in the pot back to a boil and add the pasta. Cook it according to package directions for al dente. When done drain it and put it into a large serving bowl.
4. Drain the peas and add them into the bowl of a food processor with garlic, lemon zest, lemon juice and olive oil. Puree until smooth. Season with kosher salt. Pulse cheese in the mixture for 2 seconds.
5. Toss the pea pesto with the pasta and season with additional kosher salt and pepper if needed. You can garnish with additional Parmesan cheese if desired.
