Basil pesto, goat cheese, and chicken on ciabatta bread.
Season chicken breasts with salt, pepper, and dried basil. Place oil in a skillet on medium-high heat. Place seasoned chicken breasts onto oil and cook through, about 5-6 minutes on each side.
While chicken cooks, spread 1/2 tablespoon each of basil pesto and mayonnaise on separate sides of the bun. On the side with the pesto, place 2 tablespoons goat cheese and place in the microwave for 15 seconds. Spread warmed cheese so it covers the whole bun. Place chicken in the bun and top with 1/2 of the roasted red pepper. Repeat for the other sandwich.
