Description

It’s a cross between mac ‘n’ cheese and a pizza. It’s easy to make and is a piece of cake to double, triple, or even quadruple. It’s also a very flexible recipe, so you can add different cheeses or throw in veggies if you want to pretend it’s healthy.

Ingredients

  • ⅔ cups Orzo (uncooked)
  • ½ cups Diced Pepperoni
  • ½ cups Chopped Onion
  • 2 Tablespoons Flour
  • ⅔ cups Chicken Broth
  • ⅔ cups Shredded Cheddar Cheese
  • ¼ cups Bread Crumbs
  • 1 Tablespoon Olive Oil

Preparation

1. Cook orzo in water according to package directions. Drain and set aside.

2. Combine the pepperoni and the onion in a skillet over medium-high heat. Cook until the onions are soft. Trust me when I tell you that no fat will be needed for this step.

3. Add the flour to the pan and cook, stirring frequently, for a few minutes or until the floury taste is gone. The dish will not look at all attractive at this point.

4. Add the chicken broth and cook, stirring frequently, until the sauce starts to thicken. This is a good time to add cooked veggies like broccoli if you want to.

5. Take the pan off the heat and stir in the cheese until it is all melted. Add the orzo. Pour into prepared casserole dish.

6. Mix bread crumbs and olive oil and sprinkle over casserole. I like to add pizza seaoning to the topping.

7. Cook at 350 degrees for 15 minutes or until bubbly and the bread crumbs have crisped up.

I made this last night and I thought it was easy and very good! I added spices but changed nothing else. Thanks for the quick and great recipe
