Glazed, roasted salmon to die for!
Remove skin from salmon fillets and check for any bones. Remove any bones found. Place fillets in a small dish or Ziploc bag. Mix maple syrup and soy together and pour over salmon. Marinate in the maple soy mix for at least 4 hours, but up to 24 hours. The longer the better.
Preheat the oven to 500 degrees. Place foil on a baking sheet and oil lightly or spray. Crack pepper with a mortar and pestle for a very coarse grind, or grind pepper coarsely (you really want to grind pepper just before using) into a shallow dish. Take 1 fillet and press the top of the fillet into the pepper, forming a pepper crust. Place the filet on the foil, pepper side up, and repeat with remaining fillets. Bake on the top rack 7 minutes. The syrup may smoke a bit, but don’t worry about that. It’ll be fine.
Note: The salmon can also be grilled.
