Penne with Vodka Sauce

Description

This is the easiest sauce to make and everyone raves when I make it.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Tablespoon Butter
  • 2 cloves Garlic, Minced
  • 2 whole Shallots, Minced
  • 1 cup Vodka
  • 1 cup Chicken Stock
  • 32 ounces, weight Can Crushed Tomatoes
  • ½ cups Heavy Cream
  • 20 leaves Fresh Basil, Shredded Or Torn
  • 16 ounces, weight Penne Rigate

Preparation

Heat a large skillet over moderate heat.

Add oil, butter, garlic, and shallots. Gently saute for 3-5 minutes.

Add vodka to the pan. Reduce the vodka by half over the heat, this will take 2-3 minutes.

Add chicken stock and tomatoes. Bring sauce to a bubble and reduce to a simmer. Season with salt and pepper to taste.

While sauce simmers cook pasta in salted, boiling water until al dente.

Stir cream into sauce, when sauce begins to bubble, remove from heat.

Drain pasta. Toss hot pasta with sauce and basil leaves.

This was tasty enough. I should have added a bit of red pepper flakes when I was sauteeing the shallots/garlic, I think that would have given it more flavor as it’s a bit bland as written. Not on the fault of the author of the recipe though, all of these sorts of recipes are similar. I did add some parmesan cheese at the end and had it at the table as well. It seemed to make quite a bit of sauce, my noodles were swimming, but the kids ate it up so I am not complaining!

Very Good! I used a 32 oz. can of tomatoes so I added 4oz of roasted red peppers that I put in food processor. next time I would use less basil. I also think that grated cheese is a good addition. I served it over fusili pasta with chicken and peas. Yumm!

I made this the other night, and it was tasty but a bit bland. It may have been because I didn’t have any shallots. I also found the sauce too thin. If I make it again I will probably add some tomatoe paste to thicked it up and oregano or other spice for a bolder flavour.
