My mother has been making this for me for years. It’s a variation on a fluffernutter sandwich but SO much better!
Preheat oven to 350 degrees.
Spread about 2 tablespoons of peanut butter onto each slice of bread. Place bread on a cookie/baking sheet. Top with about half a cup of mini marshmallows on each slice of bread.
Place cookie/baking sheet in the oven and bake for about 15 minutes. You want the bottom part of the marshmallows to get gooey and the top part to be brown and crispy. Make sure not to overcook them.
When you pull it out of the oven, the bread should be slightly toasted, the peanut butter warm, and the marshmallows gooey with a crunchy top. Enjoy!
