Easy and FAST and yummy and healthy to boot! Well, the tablespoon of butter probably isn’t, but it sure made it taste wonderful! Go heavy or light on the garlic to taste (we like lots) and sprinkle on red pepper flakes for some heat.
Cook bowtie pasta according to package directions until just al dente. Drain well.
Meanwhile, in a large skillet, heat oil and butter over medium heat. Add onion, mushrooms, and garlic; cook and stir for 2 to 3 minutes or until mushrooms are nearly tender. Salt and pepper to taste.
Stir in spinach and thyme (if using); cook 1 minute or until heated through and spinach is slightly wilted. Stir in cooked pasta; toss gently to mix. Serve and sprinkle with cheese and red pepper flakes (if using).
Serve immediately with baby carrots and fruit and a slice of your favorite garlic bread!
