Description

It’s getting to be that time of year again, when pumpkin flavor is appropriate for everything—even pasta.

Ingredients

  • 16 ounces, weight Rigatoni
  • 8 ounces, weight Cream Cheese, Cubed
  • ½ cups Shredded Parmesan Cheese Plus More For Garnish
  • 1 stick Butter
  • 1 cup Milk
  • 1 cup Pumpkin Puree
  • ¼ teaspoons Red Pepper Flakes
  • Ground Nutmeg To Taste

Preparation

1. Cook pasta according to package directions.

2. While pasta is cooking, place cream cheese, Parmesan cheese, butter and milk in a large saucepan. Cook on medium-low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices. Cook until heated through, stirring occasionally.

3. Add sauce to pasta and toss lightly. Serve topped with additional Parmesan cheese if desired.

This was awesome! I also added grilled/cubed chicken breast, as well as shredded kale. So simple and yet a complete meal.
