My husband and I enjoy our Jersey tomatoes every summer. We usually put cream cheese on a bagel and top with tomatoes and salt and pepper. Thought I’d take that and somehow use it with pasta. End result: absolutely delicious!
Boil your pasta. Place cream cheese in a serving bowl. Once pasta is done, pour it over top of the cream cheese. Add pasta water. Stir until cream cheese is completely melted and covers all the pasta. Add the parmesan cheese, salt, pepper, and parsley. Mix that in with the pasta. Add tomatoes. Stir and enjoy!
Recipe can totally be doubled to make more!
