Easy pasta dish with bell peppers and a garlic olive oil sauce (chicken optional). GREAT reheated (especially at midnight).
Cook and drain pasta.
While pasta is cooking, slice bell peppers in thick slices, chop onions and mince garlic.
Shredded chicken is optional. I use roasted chicken from the grocery store if I have leftovers.
Heat olive oil over medium-med. high heat. Saute onions for 2-3 minutes. Add in garlic and saute for another minute.
Toss in the bell peppers and the rest of the seasonings. Splash in some white wine and cook to desired consistency.* Add in the cooked chicken.
Pour bell pepper mixture over noodles and combine. Drench with Parmesan and serve!
*NOTE – I like mine loosey-goosey, so I cook them for quite a bit…about 15 minutes.
