Description

A light, easy to prepare, perfect for a weeknight dish!

Ingredients

  • 4 pieces Cod, 6 Ounces Each
  • Salt And Pepper, to taste
  • 1-½ Tablespoon Grainy Brown Or Dijon Mustard
  • ¼ cups Fresh Breadcrumbs (I Like French Bread)
  • ¼ cups Fresh Chopped Parsley
  • 2 cloves Garlic, Minced
  • 1 teaspoon Olive Oil, Plus Extra For Greasing Your Baking Dish

Preparation

Brush your chosen baking dish with olive oil. Preheat your oven to 425 F.

Sprinkle your fish with a bit of salt and pepper, then using the back of a spoon or your fingertips, lightly coat the tops of the fish with the mustard. Set aside.

In a medium bowl, combine breadcrumbs, parsley, garlic and olive oil, toss until combined. Press topping evenly onto the tops of each piece of fish.

Bake at 425 F for about 10 minutes or until your fish flakes with a fork.

Variation: You can also chop up some black or green olives or capers and add to the topping as well.

I just tried this but had to vary it a bit for what I had in the house.

I used honey dijon and spread a thin layer on both sides of the cod. It gave it quite a bite. The kids and hubs love that, me, I like it milder so will only do one side for me.

I also used extra crispy, original shake and bake since I was without bread crumbs.

I added about 1.5 tablespoons grated parmesan to the bread crumbs, garlic and parsley mix.

I coated both sides of the cod with the breadcrumb mixture.

All that said, we all enjoyed it and it’s definately a keeper.

Delightfully easy to make and a big hit with the family. This will be fun to adapt for all kinds of meat and fish. Used honey mustard on cod and salmon. Used dijon on another piece of cod. Used panko breadcrumbs for all. Could use a little more salt, this time in the parsley mixture. Will definitely try sarcasticquilter’s parmesan add, too — could provide just the amount of saltiness I missed.
