Parmesan pasta loaded with veggies and flavored with garlic, Italian spices and lemon.
Cook the pasta according to box directions, reserving one cup of the cooking water before draining.
In a large skillet over medium heat, saute the garlic in the olive oil and Italian seasoning for 2-3 minutes until the garlic is tender.
After the garlic is tender add the broccoli and bell peppers to the pan and cook for 5-10 minutes until cooked through. When the veggies are done stir in the drained pasta. Add the Parmesan cheese, reserved cooking water, lemon juice and zest, and salt and pepper. Stir until everything is combined. Finally stir in the frozen peas and cook for a few more minutes until the cheese is melted, the peas are warm, and everything is well combined.
Serve the pasta, topping with extra cheese if desired.
