A super easy salmon dish that’s suitable for company. I first had this recipe on a family vacation in Sweden. Even though the recipe contains mayo (which I generally detest), cooking the mayo changes the texture and taste to a much more delicate flavor that pairs very nicely with the salmon.
Start with a nice fillet of fresh salmon. Whatever size you get at the grocery store is suitable, I find a large fillet usually serves 4. Remove any obvious pin bones, rinse, and pat dry. Don’t worry about the skin.
Place your salmon in a large oven safe baking dish. A cookie sheet lined with foil makes for easy clean up.
Salt and Pepper the salmon.
Spread the salmon liberally with mayo, at least a cup for a large fillet. You want to frost it like a cake. Sprinkle the mayo frosted salmon with lots of dill, lemon pepper, and top off with 2-3 Tablespoons capers.
Bake salmon in a 350 degree oven for 15-20 minutes depending on the thickness of the salmon. Salmon will be done when it flakes easily with a fork.

Recipe tasted great. I used WAYYYY less Mayonaise though. I used more like 1/6th cup. Spices were great though.
