Oyster po’ boy is also known as the “peace maker.” The poetic name derives from the fact that 19th-century husbands, coming in late from a carouse or spree, would carry one home to cushion a possible rough reception from the lady of the house.
1. Prepare the oysters according to the directions for “Fried Oysters.” https://tastykitchen.com/recipes/recipes/main-courses/fried-oysters/
2. Cut French bread loaf about 1 foot long, then slice in half lengthwise.
3. Place bread in a 300°F oven to warm for about 6 minutes.
4. Spread butter generously over the inner surface of the bread and heap the fried oysters on the bottom piece. Season with salt to taste.
5. Add Tabasco®, ketchup, and cover with the top piece of bread.
6. Serve hot.
