Description

This roasted pork tenderloin recipe couldn’t be simpler. It’s marinated overnight in a healthy teriyaki glaze and baked in the oven in under 20 minutes.

Ingredients

  • ¼ cups Organic Maple Syrup
  • ¼ cups Gluten Free Tamari
  • 2 cloves Garlic, Minced
  • 2  Inches Fresh Ginger Root
  • 1 pound Pork Tenderloin

Preparation

1. In a small food processor, puree the maple syrup, tamari, garlic, and ginger until smooth. Alternatively, you can mind the ginger and garlic by hand and whisk in the remaining ingredients. Transfer the marinade to a resealable plastic bag. Add the pork and swish around until coated. Marinate in the refrigerator for at least 1 hour, preferably overnight.
2. Preheat the oven to 500ºF. Remove the pork from the marinade and set on a foil-lined baking sheet. Roast in the oven for approximately 20 minutes, until the pork is nicely browned on top. Allow to rest on a cutting board for 10 minutes.
3. Meanwhile, transfer the remaining marinade to a small saucepan. Cook on medium heat until reduced by half.
4. Slice the pork on the bias, drizzle with the reduced sauce, and serve immediately.

Recipe is confusing – Cooking time is to cook meat for 1 hr. 15 minutes but the indication in the recipe instructions are to cook meat at 500 degrees for 20 min. I assume 20 minutes is the correct time. In any case it is on the menu for dinner this evening. Looks yummy!
