Rather than frying up a batch of chicken, I have a recipe that only requires you use the oven. No frying in a deep fryer or in a pan.
Preheat oven to 400ºF. Combine flour, salt and paprika in one dish, egg in another dish, and bread crumbs in the last dish.
Dredge the drumsticks in flour, then egg, and lastly breadcrumbs. Place on a cookie rack above a shallow baking pan lined with foil (for easy cleanup). Drizzle olive oil on both sides of the chicken (don’t worry about covering entire surface of chicken, just a drizzle on both sides will do).
Bake uncovered for 45 minutes, turning halfway during the baking process. Cool down for 5–10 minutes before serving.
