Description

One of the first meals I ever made for my husband. You can never go wrong with seafood, butter and wine.

Ingredients

  • 1 pound Raw, Peeled And Deveined Shrimp
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ½ pounds Whole Wheat Linguine (or More)
  • 2 Tablespoons Olive Oil
  • 3 Tablespoons Butter, Divided
  • 1 whole Shallot, Sliced
  • 3 cloves Garlic, Minced
  • ½ cups Dry White Wine, Like Chardonnay
  • ½ teaspoons Red Pepper Flakes
  • ⅓ cups Parmesan Or Asiago Cheese
  • 2 Tablespoons Freshly Chopped Parsley

Preparation

Make sure shrimp is cleaned and completely dry, then season with salt and pepper. Boil your water for pasta and cook pasta according to directions.

Heat a large skillet over medium-high heat, adding olive oil and 2 tablespoons butter. Add sliced shallots with a pinch of salt and saute until soft, about 3 minutes. Add in minced garlic, then immediately add in shrimp (this prevents the garlic from burning) in one layer so each side can cook. Cook for only 60 seconds, then flip shrimp and cook for 60 seconds more. Pour in white wine and let mixture simmer for about 2-3 minutes. Turn off heat and stir in the last tablespoon of butter.

Add all pasta to a large bowl and pour entire shrimp and wine mixture over top. Add red pepper and cheese and toss until everything is combined. Add additional olive oil or salt and pepper to taste if desired. Sprinkle with parsley and serve with garlic bread.

theyoungcook – i honestly am not positive about how the cooking off of alcohol works, but i am pretty sure that it is cooked out. you can definitely use nonalcoholic wine too! :)

if you’re serving this for dinner, where kids are present. can we just use nonalcoholic wine or is the alcohol cooked out of??

This is delicious! A nice flavor, but still very ‘light’. I think a small splash of lemon juice would really make this dish shine a little brighter.

I will add the extra garlic next time. FYI, I forgot to add the last Tbsp of butter and no one noticed!

Very delicate flavors; very easy to make; I added an extra garlic clove as cookingtree suggested, and really liked it. Family loved it.

This dish was easy to prepare and had a very nice depth of flavor. Next time I might add a bit more garlic as we love the stuff and it was fairly mild here.

This scampi recipe is excellent! My husband requested shrimp scampi for his birthday dinner, and this is the best recipe I’ve used for this dish yet. The flavors are balanced, and though it’s rich and decadent, it isn’t too heavy. Thank you!
